These “midds” or “middlings” are high in protein (18%+), high in fiber, & packed with B vitamins. Add them to recipes such as our “Sourdough Crackers” for a delicious treat from history!

The nutty, slightly cinnamon flavor of this heritage wheat is a superstar. 

We grew this 1800s heritage wheat (Rouge de Bordeaux variety) on the family ranch. These stone-flaked midds have a red, umber color that is stunning. They include coarse bits of the germ, endosperm, & bran) & they have a flavor you just can’t get from modern wheat varieties. 

Stone milled wheat is packed with flavor and nutrient benefits that modern roller mills can’t compete with. Slower to make? Yes. Worth it? 100%

Rouge de Bordeaux was THE top wheat of 1800s French bread bakers. A flavor straight out of history!

Rouge De Bordeaux is a heritage wheat variety that has a nutty, almost cinnamon flavor, and is considered by many to be easier to digest than modern wheat. Stories of its roots in ancient Roman times, where it was then saved by the monks and taken to remote regions of France, leads us to today, where this wheat still exists! And has a brilliant history of being beloved by French bakers throughout the 1800s/1900s.
